Camping Snacks

One of my favorite snacks to take camping or just to have around is homemade granola. It is so simple to make and so delicious.   When others taste it they comment on the flavor. I think the secret is the cardamom seasoning which can be a little difficult to find. As often requested I post the recipe as I use it. If you’ve ever made granola you know there are at least a hundred variations so do your own thing!

 

 

 

 

Sharon’s Granola

Mix together in a large bowl:

4 cups old fashioned oats

2 ½ cups of nuts ( I use pecans, slivered or sliced almonds, and walnuts)

1 cup coconut

 

In a 2 cup measuring cup mix:

1 teaspoon cinnamon

1 teaspoon salt

½ teaspoon cardamom

¾ cup maple syrup ( the real stuff is really great but I change out the fake stuff with a little honey)

½ cup olive oil

¼ cup brown sugar

 

Pour liquid mixture over the dry ingredients and spread on two parchment lined cookie sheets. Bake at 350 degrees for 15 minutes. Turn the oven off and let sit in oven for 3-4 hours, stirring once or twice in that time period. Remove from oven and store in covered containers.
